Salmon Ceviche

There is a lot of things I love about Costco. One of them is their beautiful fresh fish lineup. Scored a very beautiful fish of trout salmon. There had been a lot of plans made around this particular salmon, but looking at its freshness, I think the winning recipe should be my adaptation of Gordon Ramsay’s Salmon ceviche recipe. It’s very easy to do, and no particular cooking involved, but you do need to have the right stuff.

Salmon Ceviche

Ingredients

a big chunk of fresh salmon fillet, skinned and boned (ask your fish monger to do it for you), I think the particular fish was about 500 grams

3 fresh chile, thinly sliced (seed the chile if you’re not too keen for some hot bites)

2 scallions/chives, trimmed and thinly sliced diagonally

3 fat garlic cloves, peeled and thinly sliced

small handfull of fresh sweet basil, shredded

For the dressing

Juice of 1 lemon

Juice of 1 yuzu

2 tbsp of soy sauce

2 tbsp of sesame oil

drizzle of olive oil

sea salt and black pepper

pinch of splenda/brown sugar

Directions:

  • For the dressing, whisk the citrus juice, soy, sesame and olive oils together in a bowl. Season with salt and pepper, and add a little sugar to taste
  • Slice the salmon and arrange on serving plates, scatter over the chile, scallion and garlic. Spoon over the dressing and let marinate for 10-15 minutes
  • Scatter the basil over the ceviche when ready to serve
  • Perfect for starters, serves 6
